We process our Bresaola using exclusively fresh "Fassona Piemontese" meat,
This type stands out above all for its tenderness and thinness, characteristics that rarely go hand in hand.The salting takes place in our laboratory, here no chemical preservatives are added.
For the first 15 days the meat is massaged daily and left to rest at a temperature of 4°C. Once this time has elapsed, the maturing process will begin and will last approximately 40 days in the RetroBottega cellars.

Confezionamento
La bresaola verrà pulita dalla sua nobile muffa esterna e confezionata sottovuoto. Da consumare preferibilmente entro 30 giorni.
