Our history

At the end of the 1950s in Campovico by will of my grandfather Albino "a neighborhood shop" was founded.

The intent was to give a modern space, sufficiently large and organized to be the headquartersof the then  Cconsumer operation managed by Frigeri, my great-uncle.

 

They were the first village shops where everyone knew each other, where you could pay in lire or by bartering the products of your land,

there were no packages but only bulk.

Then "progress" followed and from a cooperative it transformed into a mini-market with various private managements over the decades but always maintaining a certain "social" character.

Living above the shop, I have always frequented it since I was a childand observed, as for many it was simply a part of everyday life.

 

As often happens first for study and then for work you move away from the country and from your habits.
This is how it was for me, having graduated as a catering technician, 
I started my apprenticeship in the world of fine dining, in Italy and London.

Cooking and quality food have always been my great passions and the luck of finding great Chefs or rather great "masters" has always been on my side.

 

In 2011 during a seasonal break from the kitchens,

I started to frequent the world of "Slow Food" with the producers of "Bitto" cheese.
This was love at first sight for me,

on the one hand the courageous story of our farmers who, led by their leader, engaged in a real battle for the defense of the "Rebel Historical Bitto"

On the other hand, the possibility of going behind the scenes of a kitchen, For get to know and interact with those producers from all regions,

that I supply our tables with excellence.

Authentic people who get their hands dirty every day to protect the

"good, clean and fair."

 

In 2014 this passion became my job and that of my partner Gloria, moving from observers to active defenders of the cause of the "Historical Bitto"
From the kitchen I moved to the cellar, to the mountain pastures, to the stables.

As a chef I rediscovered myself as a seasoner, refiner, selector.

 With the great possibility of learning every secret of what is undoubtedly one of the most famous and discussed among dairy products.

In 2019 the "Country shop" after a long "resistance" to modern times, was definitively ceasing to exist.

 Meanwhile, my beloved work experience for the Bitto Storico Ribelle also began to be limited.
With my 30 years and the desire to do, create and experiment I couldn't
 more to be a simple all-rounder.

 

So overnight I decided to group together all my work experiences andtry to give new life to a given up activity.

 

It was born from the roots of our ancestors

"RetroBottega"
"taste laboratory"

A project of dreamers linked to traditions and good food, onevery close bond with producers and consumers.

An idea of "Cooperation" in the modern sense.

With Romina, friend and trusted collaborator

and with Gloria, our lifelong companion, today we are here to offer our specialties beyond the country,

but with the intention of remaining US also through the web.
